Spinach Pastries

30 minutes prep, 20 minutes to bake
Ingredients
- 1 tbsp olive oil
- 1 clove garlic, minced
- 1/4 cup onion, chopped
- 2 tbsp green onion, chopped
- 2 oz (or 1 cup) chopped fresh spinach
- 1/4 cup grated parmesan cheese
- 1/4 cup ricotta cheese
- 1/2 cup grated swiss cheese
- 2 tbsp chopped parsley
- 1 egg
- 1 17.5 oz package puff pastry sheets
- 1 egg yolk
Directions
- remove puff pastry from refrigerator to thaw
- preheat oven to 350 degrees
- heat 1 tbsp olive oil in skillet; saute garlic until slightly browned
- add onion and green onion; saute for a few minutes
- add spinach; saute for another minute or so
- place spinach mixture in sieve to drain and cool
- mix together parmesan, ricotta, swiss, parsley and egg
- add cooled spinach mixture and mix
- remove puff pastry from box; roll out first sheet on lightly floured surface
- using a pizza wheel or sharp knife, cut pastry into 9 squares
- spoon a small amount of spinach/cheese mixture onto each square
- wet the edge of squares with water and fold each pastry into a triangle or rectangle; press closed with the edge of a fork
- place pastries on an ungreased baking sheet
- repeat process with second pastry sheet
- mix egg yolk with a 1/4 teaspoon of water; using a pastry brush, gently brush egg wash over each pastry
- bake at 350 until pastry is golden brown, about 20 minutes
- serve warm or at room temperature; enjoy!
