Pecan Cheesecake Pie

Makes 1 9-inch pie
Preparation Time
Ingredients
- 1 8 oz package cream cheese, softened
- 1 egg
- 1/3 cup sugar
- 1/2 teaspoon vanilla
- 1 deep dish, unbaked 9" pastry shell
- 1 cup pecan halves
- 2 eggs
- 1/4 cup sugar
- 2/3 cup dark corn syrup
- 1/4 teaspoon maple flavoring
- 1/4 teaspoon vanilla
Directions
- in small mixer bowl, combine cream cheese, 1 egg, 1/3 cup sugar, 1/2 teaspoon vanilla. Beat till mixture is light and fluffy.
- prick pastry shell with a fork a few times then pour mixture in.
- arrange pecan halves across whipped cream cheese mixture.
- in bowl, combine 2 eggs, 1/4 cup sugar, corn syrup, maple flavoring, and 1/4 teaspoon vanilla; mix well.
- carefully pour over pecans.
- bake at 375 for 40-45 minutes.
