Pork Loin in a White Wine and Ginger Marinade

Preparation Time
approx. 1 1/2 hours (10 minutes to prep, 1+ hour to marinate, 15 minutes to cook)
Ingredients
- 2 lb pork loin
- fresh ginger, diced
- garlic, crushed
- white wine (or bourbon)
- soy sauce
- salt and pepper
Directions
- Wash pork. Cut off fat.
- Mix remaining ingredients in a non-metallic bowl. Add pork, coating well. Cover and let marinate for an hour or longer.
- Roast at 425 degrees for 15 minutes or so.
