Mashed Potatoes with Crispy Onions

Ingredients
- 4 medium white pototoes, pealed and cut into cubes
- salt & pepper
- 1/2 white onion, diced
- 6 tablespoons butter
- 1/4 cup heavy cream or sour cream
- 1 teaspoon nutmeg
Directions
- boil potatoes in heavily salted water until potatoes are cooked and soft (~ 20 minutes).
- while potatoes are cooking, saute onion in 3 tablespoons butter until brown and crispy.
- when potatoes are done, drain and beat with an electric mixer.
- beat in 3 tablespoons butter and heavy cream.
- add nutmeg, salt & pepper; mix well.
- place potatoes in serving dish and spoon sauteed onions on top
